Hello Debra,
I read an answer from you regarding the Cuisinart Green Gourmet frying pans that you like them best and that they are safer than other non-stick pans. I looked to buy a Cuisinart Green Gourmet pan, but there are quite a few negative reviews saying that the pans begin to stick just after 2 months. Did you notice the same problem? Or is there a secret how to take care of them to avoid this problem? These pans are quite expensive, so I wanted to check this before committing to buying one.
Also, would the cast iron frying pans be as good? Would they also be non-stick (is the trick only in not overheating?) and eco-friendly?

I have had NO trouble with my Green Gourmet pans sticking. Just none at all. So I don’t know what to say about those bad reviews. I do know that competitors post bad reviews about products that are not true. Perhaps that is the case here.
I prefer my Green Gourmet pans to cast iron, though I have a cast iron griddle that I love. The baked-on ceramic finish on the Green Gourmet is actually VERY slippery. Cast iron is nonstick only if you keep it well seasoned.

No you can cook anything in it, but I no longer recommend them because the finish doesn’t hold up. THe nonstickiness wears away.
Looking for the “safest” non-toxic cookie sheet. Recommendations please.
I use a regular aluminum/steel baking pan with a silicone baking mat or unbleached parchment paper on top. You can get the parchment paper at your local natural food store. Bed Bath & Bayond sells silicone baking mats.
I bought the NuWave ceramic frying pans and one stainless pot. They are supposedly totally toxic free, easy to clean as nothing sticks to the ceramic pans; the stainless needs a slight amount of washing, not scrubbing. While they are for inductions cooking, you can use on any kind of stove. I also got the heating element because I can put it on a counter and cook something when my stove is crowded with other people or food. I don’t know if I should order the oven as it is made out of plastic, but no food touches the plastic. You can cook veggies, meat, potatoes at one time and nothing gets over or under done. Dr. Oz has guest doctors on now who are saying we shouldn’t cook in cast iron pans because the iron gets caught with plaque in our brains causing dementia. BarbP.

This was from 2008. I don’t know if the dome is still made from polycarbonate containing BPA, but I know more about BPA now and think it probably would release from the dome when heated. You could contact the company and ask what the dome is made from and ask specifically if it contains BPA.

The coating is ceramic. It wears down after a few years. The pan is still usable, but not slick enough for omelet flipping. Cuisinart will replace pans at no charge, but you have to pay shipping both ways. For me, it cost about the same to just buy a new pan at a local store.
I have two sets, one for my house in MI and one for Fl. I had a habit of cooking on high and I did have some probelms with my first set and replaced a couple. The set second set I have been very careful not to never use High heat and have had no problems and I use them a lot. The second set is now over a year old. Worth every penny. They cook hotter than other pans so no need for High.
I have had ALL of my Green Gourmet pans start sticking even after minimal use. I never use soap on them, I never overheat them. But they do stick, especially eggs. I have to use oil to keep things from sticking. 🙁

I don’t know, they don’t tell you exactly. I’ve seen them in stores and the lining doesn’t feel “right” to me, so I don’t use them. But I can’t tell you what’s in them.
You have to season the pan like cast iron. In the instructions you grease it and put it in the oven at 350 for 1 hr before you use it and after to restore the nonstick surface if it starts to stick. Also you can not put the pan in the dishwasher. You must hand wash it. I have had my pan for over a year and re-season it once when scrambled eggs started to stick. Fixed the problem and it now works great. I don’t think the negative reviews are following the instructions properly.
